How to create a Victoria Sponge Cupcake

My first blog, and what a better place to start than with a Classic! 
As a big fan of classic recipes I couldn't wait to try this idea in my head of creating a Victoria Sponge Cupcake.

I created a batch of Vanilla Cupcakes, and a then another batch of Cupcakes filled to just 1 inch.  The 2nd batch created the lids :o)

Step 1: Core the Cupcake and add a dollop, (love that word) of Strawberry Jam.

Step 2: Re-plug the Cupcake.

Step 3: Swirl on your chosen topping over the plug.

Step 4: Add the lid to create the Victoria Sponge look

Step 5: Lightly sprinkle with Icing sugar and the Cupcake is complete :o)
